Cheesy Chick'n Casserole


3 cups Penne noodles

3 tbsp Nondairy butter

1 med Red bell pepper (diced)

1 med Onion (diced)

1 cup Nondairy half and half

3 cups Nondairy cheddar (shredded)

16oz Plantbased Chick'n ground

3 Garlic cloves (minced)

1 tsp Chili powder

1/4 cup Green chiles

salt and pepper to taste

1/2 cup Nondairy parmesan

1 cup Vegetable broth


  • Preheat oven to 400F needs a 9X13 dish.

  • In a pan over medium heat, cook chick'n. Set aside.

  • Cook Penne according to package

  • Saute onion, red pepper, and garlic over medium-high heat

  • In a large bowl, add vegetable broth, half and half, onion mixture, cheese, parmesan, butter, chick'n, and noodles mix well. Add green chiles, salt, pepper, and chili powder. Mix well.

  • Pour into pan sprinkle cheese on top.

  • Bake in the oven for 25-30 minutes
