Easy Vegan Banana Bread


I had several ripe bananas that I did not want to waste, so I found an easy banana bread recipe to veganize. You don't always need to reinvent the wheel. Find recipes you like and swipe out the ingredients that are not vegan.


This recipe was straightforward to modify. The original recipe is from Simply Recipes.


Ingredients:

3 medium ripe bananas (mashed)

1/3 cup nondairy butter (melted)

1 tsp baking soda

1/2 tsp salt

3/4 cup sugar

flax egg (1 tbsp ground flaxseed + 3 tbsp water)

1 tsp vanilla

1 1/2 cup unbleached all-purpose flour


Directions:

Preheat oven to 350F and pregrease a loaf pan


In a large mixing bowl, combine the banana and butter. Next, add the baking soda, salt, sugar, flax egg, and vanilla. Mix well. Finally, mix in the flour.


Pour batter into the loaf pan, and bake for 50 minutes, or until a toothpick or knife comes out clean.


Remove from pan and allow to cool before serving.
