Easy Vegan Enchiladas

Vegan Enchiladas is an easy, yummy meal you can make in 30 minutes. Your whole family, vegan or not, will enjoy this veganized dinner recipe.
Ingredients:
12 oz plantbased crumble
1/2 med onion (diced)
2 large garlic cloves (minced)
1/2 cup black beans(drained)
1 green bell pepper (diced)
1 jar enchilada sauce
1 cup nondairy cheddar cheese (shredded)
1 1/2 cup nondairy monterey jack cheese (shredded)
8 tortillas corn or flour
nondairy sour cream and cilantro fpr serving
Directions:
Preheat oven 375F
In a skillet over medium-high heat, add olive oil and saute onions and green pepper for 2 to 3 minutes. Add garlic saute for 1 minute.
Add meat crumble cook 5 minutes. Set aside 1/2 cup Enchilada sauce. Pour rest over meat crumble and simmer on low heat for about 5 minutes.
Pour 1/4 cup of enchilada sauce bottom of 9X13 baking dish.
Spoon filling on a tortilla, sprinkle cheddar cheese, fold tortilla, and place in casserole dish. Repeat
Pour the rest of the enchilada sauce over tortillas. Sprinkle Monterey Jack cheese over tortillas. Sprinkle a little cilantro and bake in the oven for 15 minutes or until cheese is melted.
Serve with nondairy sour cream (optional)
