Easy Vegan Meatloaf


This is an oldie but goodie classic. If you thought you had to take this out of your rotation, put it back. Here is a veganized version that you and your family will enjoy!


Tips:

  • Make your flax egg 10 minutes before you need it, so it has time to gel. (1 tbsp flax meal + 3 tbsp water)

  • the bread crumbs are important to holding your meatloaf together

  • Mashed Cauliflower pairs well with this yummy loaf


Ingredients:

24 oz meatless ground (impossible is my favorite)

1 flax egg

1 sm onion (diced)

1 cup almond milk

1 cup vegan bread crumbs

salt and pepper to taste


Ketchup mix:

2 tbsps brown sugar

2 tbsps yellow mustard

1/3 cup ketchup



Directions:

  • Preheat oven 350 F and lightly grease loaf pan

  • In a large bowl, combine meatless ground, flax egg, onion, milk, bread crumbs, salt and pepper. Mix well.

  • Shape meatless mixture into a loaf and place in prepared loaf pan.

  • In a small bowl, mix brown sugar, mustard, and ketchup. Spread over top of meatloaf.

  • Cook in the oven for 30 minutes
