Easy Vegan Snickerdoodles

Who does not love a good ole snickerdoodle? It is easily one of the easiest cookies to create. I love this cookie because it's soft, thick, and delicious!
My favorite part of this cookie is the cinnamon and sugar topping. It is just enough sweetness to satisfy my sweet tooth.
Ingredients:
*Flax egg: make flax egg about 10 minutes before you start baking. It will need time to thicken before use.
1 tbsp flaxseed meal
3 tbsp water
Cookie dough:
1 1/3 cups cane sugar
1 cup nondairy butter (soften)
1 flax egg*
2 tsp vanilla extract
2 3/4 cups unbleached all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp ground cinnamon
Topping:
1/3 cup cane sugar
2 tsp ground cinnamon
Directions:
Preheat oven to 375 lightly spray the baking sheet or use parchment paper
In a large bowl, cream butter and sugar with a hand or stand mixer.
Add flax egg and vanilla mix well. Set aside.
In a medium bowl, whisk flour, cream of tartar, baking soda, salt, and ground cinnamon. Combine with wet ingredients until a dough forms. (if your dough is crumbly, add a 1 to 3 tbsp of nondairy milk
Scoop out 2 tbsp of dough and roll into a ball. Roll in cinnamon sugar and place on a baking sheet. Repeat.
Bake for 11 minutes. Allow to cool and move to a cooling rack to cool completely.
