Spicey Vegan Shrimp over Rice

I never in a million years thought I would get to eat anything that resembled shrimp again. Until I stumbled upon this company called Vegan Essentials. I first heard about them on Tabitha Brown's cooking show. She was making some vegan shrimp tacos. The shrimp looked real! I had to try it for myself, but when I went to order the vegan shrimp. It was sold out! I could have cried, I went on their waiting list in August and received my notification in early November.
Y'all it was worth the wait! This shrimp is so good! I decided to make this yummy spicey recipe with my new fave! You will definitely enjoy it too.
Ingredients;
oil
1 large onion (diced)
1 large red bell pepper (diced)
3 garlic cloves (minced)
1 cup tomato sauce
1/2 cup vegetable broth
1/2 cup fresh parsley (minced)
4 oz pimentos (drained)
2 tbsp hot sauce
1 tsp onion powder
1/2 tsp black pepper
4 cups rice (cooked)
Directions:
Over medium high heat in a large skillet, saute onions and red bell peppers in oil.
Add tomato sauce, broth, parsley, pimentos, hot sauce, onion powder, pepper, and vegan shrimp.
Bring to a boil, reduce heat and allow to simmer for 5 minutes
Cook rice according to package
Serve vegan shrimp mixture over rice.
