Vegan Baked Ziti

This oldie but goodie favorite will always be a crowd pleaser! It is easy and quick to make. My friend Maria introduced me to Baked Ziti years ago. It was not something I ate growing up. But, it was added to my dinner rotation after I ate this yummy casserole.
This was not a difficult recipe to "vegan up", but I still wanted it to taste delicious! I decided to replace the ground beef I used in the original recipe with meatless Italian sausage. I also switched out regular Penne paste for Brown Rice Penne Pasta. The last ingredient switch was the dairy. I use nondairy parmesan and shredded mozzarella.
Add a nice salad and some vegan friendly bread and you have a delicious meal!
Ingredients:
1 package meatless Italian sausage (cook according to package) slice
12 oz. brown rice penne pasta (cook according to package)
1 24 oz. jar marinara sauce
1 cup of water
1 tbsp basil
1 tbsp garlic powder
1/2 cup nondairy parmesean cheese
1/4 tsp pepper
3 cup nondairy shredded mozzarella cheese
Heat oven at 375 degrees. Combine sausage, penne, marinara, water, basil, garlic, parmesan, and pepper in a large bowl.
Pour mixture into a greased 9X12 baking dish. Sprinkle mozzarella cheese over the top of the mixture. Bake uncovered for 20 to 30 minutes or until heated through.
Let stand for about 10 minutes before serving.
