Vegan Blueberry Cobbler


Blueberry cobbler is a great sweet summer dessert recipe that is easy to make and will satisfy your sweet tooth craving.

Ingredients:

Blueberry Mix:

4 cups blueberries (frozen or fresh)

1 tbsp cornstarch

1/4 cup pure cane sugar

1/3 cup orange juice

Batter:

1/2 cup non-dairy butter (melted)

2/3 cup all-purpose unbleached flour

3/4 cup pure cane sugar

2 tsp baking powder

1/4 tsp salt

3/4 cup almond milk

1 tbsp turbinado sugar

Directions:

  • Preheat oven 350F; pour melted butter into 9X13 baking dish and set aside

  • In a large mixing bowl, toss blueberries and cornstarch. Add sugar and orange juice mix well.

  • In another mixing bowl, combine flour, sugar, baking powder, and salt. Add milk stir just enough to combine.

  • Pour blueberries into a baking dish and drizzle batter over the top. Sprinkle turbinado sugar over the cobbler.

  • Bake in the oven for 30-35 minutes or until lightly golden.

Serve warm with non-dairy ice cream or non-dairy whip cream (optional)
