Vegan Blueberry Cobbler

Blueberry cobbler is a great sweet summer dessert recipe that is easy to make and will satisfy your sweet tooth craving.
Ingredients:
Blueberry Mix:
4 cups blueberries (frozen or fresh)
1 tbsp cornstarch
1/4 cup pure cane sugar
1/3 cup orange juice
Batter:
1/2 cup non-dairy butter (melted)
2/3 cup all-purpose unbleached flour
3/4 cup pure cane sugar
2 tsp baking powder
1/4 tsp salt
3/4 cup almond milk
1 tbsp turbinado sugar
Directions:
Preheat oven 350F; pour melted butter into 9X13 baking dish and set aside
In a large mixing bowl, toss blueberries and cornstarch. Add sugar and orange juice mix well.
In another mixing bowl, combine flour, sugar, baking powder, and salt. Add milk stir just enough to combine.
Pour blueberries into a baking dish and drizzle batter over the top. Sprinkle turbinado sugar over the cobbler.
Bake in the oven for 30-35 minutes or until lightly golden.
Serve warm with non-dairy ice cream or non-dairy whip cream (optional)
