Vegan Brownie


My husband’s favorite brownie is his Nana’s brownies. Well, I was determined to find an easy, but yummy vegan brownie he would love too. I figured I could at least come in second place. LOL

I came across a vegan recipe that Tasty had for a vegan brownie. It had chocolate oozing out of it. I had to try it.

Girl!!..this brownie will change your life! I will eventually come up with my own brownie, but for now...I will enjoy this one from #buzzfeedtasty.

Ingredients:

8 oz vegan chocolate

2 tbsp ground Flaxseed

6 tbsp water

1 cup pure cane sugar plus 2 tbsp sugar

½ cup vegan butter (melted)

2 tsp pure vanilla extract

¾ cup unbleached all-purpose flour plus 2 tbsp flour

¼ cup cocoa powder

1 tsp salt


Directions:

1) Preheat oven 350 degrees F. Line 8 inch square baking pan with parchment paper.


2)Flax Egg- mix ground flaxseeds with water, stir with a fork and let sit for 10 minutes to gel.


3)Break up the chocolate into ½ pieces set aside half and melt the other half in a microwave-safe bowl.


4)In a medium bowl, whisk sugar and butter until smooth. Then add vanilla, flax egg, and melted chocolate. Mix well.


5)In another bowl, sift flour, cocoa, baking powder, and salt. Fold in to wet mixture with a spatula until all ingredients are combined. (don’t overmix) Stir in chocolate pieces.


6)Pour batter into a baking dish and smooth with a spatula. Bake for 30 to 35 minutes. Cool for 20 minutes.
