Vegan Chewy Peanut Butter Chocolate Chip Cookies

Let's make the best of our "shelter down" order and bake these yummy peanut butter chocolate chip cookies! You need something to snack on while enjoying a game night with your family.
It still amazes me how you can make yummy desserts without eggs and dairy! My husband loves peanut butter and chocolate, so he is devouring these cookies!
Ingredients:
Flax egg-this needs about 10 minutes to thicken
3 tbsp ground flax meal
1/3 cup water
1 1/2 cup peanut butter
1 cup nondairy butter (softened)sticks work better for baking
1 cup pure cane sugar
1 cup light brown sugar (packed)
2 tsp vanilla extract
3 cups unbleached all-purpose flour (sifted)
2 tsp baking soda (sifted)
1 tsp salt (sifted)
1 cup nondairy chocolate chips (I love Enjoy brand)
Directions:
Using a hand or stand mixer, cream butter peanut butter, and sugar together until light and fluffy
Add in vanilla and flax egg mix well
In a medium mixing bowl, sift flour baking soda, and salt (stir well)
Add flour mix, a scoop at a time, to the peanut butter mix. It will make a dough mix.
Fold in chocolate chips
Cover and put the dough in the refrigerator for one hour.
Preheat oven to 350F
Use a 2" cookie scoop and place cookie dough on ungreased cookie sheet
Bake for 12 minutes allow cooling for a few minutes before transferring to rack to finish cooling.
Depending on big you make your cookies, you should about 16 cookies.
