Vegan Cream Cheese Banana Muffins


The biggest myth about eating vegan that I love debunking is that all we eat is salads. That there isn't much meal variety eating vegan. This is so far from the truth. I have increased my intake of fruits and veggies, but I love recreating my comfort foods too. This has been the secret to me not giving in to temptations to eat animal products that I grew up on and loved. If I see something I like or have a taste for something, I make a vegan version of it. Some recipes are more straightforward to modify than others. Just about anything I use to eat, I have found an alternative to satisfy the craving. These cream cheese banana muffins were no exception. I already had a banana muffin recipe I loved, but I never thought of adding cream cheese. I was on my Instagram feed, and @Buzzfeedtasty shared their Cream Cheese filled Banana Muffin recipe. It looked so good! I knew I had to make it, and to my surprise, I had all the ingredients that I needed to create this recipe. I copied down the original recipe and swapped out the animal products. This was an easy recipe to modify. It turned out perfect! It was not too heavy, and it was very moist! I ate one for breakfast this morning, and it tasted just as good as when they came straight out of the oven. FYI: When you are reading the directions, you will notice I mix all the wet and dry ingredients separately before combining them. I know you feel like you are using a lot of bowls, but trust me. You are taking a chance that your muffins will be an epic fail if you try to dump everything together. This has been my experience. I hope you enjoy my version of this recipe as much as I did. Ingredients: Muffin Batter: 1/4 cup Vegetable oil 2 tbsp Lemon Juice 1/2 cup nondairy butter (melted) 1 tsp vanilla extract 1/4 cup nondairy sour cream 2 bananas (mashed) 1 tsp baking soda 1/2 tsp salt 1 cup unbleached all purpose flour 1/2 cup light brown sugar 1/4 cup cane sugar Cream Cheese Mix: 1/4 cup nondairy cream cheese 1/4 cup vegetable oil 2 tbsp lemon juice 1/4 cup cane sugar 3 tbsp unbleached all-purpose flour Directions: Preheat oven 350F, and add 12 muffin liners to your muffin pan. Muffin Batter In a medium mixing bowl, combine oil, lemon juice, butter, vanilla, and sour cream. Stir well, then add bananas stir and set aside. In another medium mixing bowl, combine flour, sugars, baking soda, and salt. Add to wet mixture and mix well. Set aside. Cream Cheese Mix In a small mixing bowl, combine cream cheese, oil, lemon juice mix well. Set aside. In another small bowl, combine sugar and flour mix and add to the wet mixture. Mix well and set aside. In your muffin pan, add 1/8 cup muffin batter to the bottom of the liner, add 1 tbsp of cream cheese mix, then add 1/8 cup muffin batter on top. Repeat until you fill all the muffin liners.


Bake in the oven 18 to 20 minutes or until golden brown.
