I first want to shout out #nutritioninthekitch for this yummy recipe! This recipe is easy and only requires three ingredients! What more can a girl ask for?
I think your kids or grandkids would love making this treat with you! I hope you enjoy it as much as I do.
3 1/2 oz dark chocolate ( I used Enjoy life dark morsels)
1 cup of pitted dates
2 oz pecan halves (or more if you like)
In a food processor, puree your dates (they will look like a thick jam and kind of clump together)
Roll the dates into balls and place on a greased baking sheet (you should be able to get about 12-15 balls depending on how big you make them)
Press 2-3 pecan halves into the top of the balls, then place your tray in the freezer for 10 minutes.
In the meantime, melt your chocolate in a small saucepan on low heat until smooth.
With a spoon, pour chocolate over your dates and return to the freezer for another 10 minutes to set.
Once they set, you can keep in the fridge until ready to serve.
