Vegan Garlic Mushroom Cauliflower Skillet


I use some of my favorite veggies in this easy one-skillet meal. I love mushrooms, spinach, and cauliflower, so this meal hit the spot for me. I hope you enjoy it as much as I do.


Ingredients:

1/3 cup nondairy butter

1 sm onion (diced)

4 garlic cloves (minced)

1 (12 oz)bag cauliflower florets

16 oz button mushrooms

16 oz fresh spinach

2 tbsp vegetable broth

2 tbsp parsley

salt and pepper to taste


Directions:

1) Heat butter in a large skillet over medium-high heat. Saute onions and garlic 3-4 minutes or until soft.


2) Add mushrooms and cook for 4-5 minutes.


3)Add cauliflower cook 8 to 10 minutes or until golden and crisp.


4)Pour in vegetable stock and add spinach cook for 2 minutes or until wilted. Add salt and pepper to taste.


5) Sprinkle with parsley and serve hot.
