Vegan Homemade Blueberry Dump Cake
I had some blueberries leftover, so I created a homemade version of the famous dump cake. You would usually use a box mix, but I don't bake with box mixes anymore. My recipe is still easy, and I think it tastes better too.
3 lbs Fresh blueberries
1/2 cup Cane sugar
2 1/2 tbsp Cornstarch
1/8 tsp Salt
1 cup Cane sugar
1 1/2 cup Unbleached all-purpose flour
1 tsp Baking soda
1/2 tsp salt
3/4 cup Nondairy butter (melted)
Vanilla Icecream (optional)
In a 9X13 baking dish, add the blueberries, sugar, cornstarch, and salt. Mix well.
In a medium bowl, mix the flour, sugar, baking soda, and salt. Sprinkle the cake mix over the fruit. Drizzle the melted butter evenly over the top.
Bake in the oven for 35 minutes or until the top is golden brown.
You can serve warm or cold.
