Vegan Margarita Cupcakes

Cinco De Mayo is around the corner, and I was searching for something fun to bake for it. I came across Margarita Cupcakes, and I was very confident I could create a vegan version.
People let me tell you these cupcakes are everything! Let me make it clear these are grown folk cupcakes! There is tequila in the frosting. But, they are delicious and hard to eat just one.
When we can have GNO again, this is what I'm bringing to the party.
Ingredients:
1 1/4 cup unbleached all-purpose flour
3/4 cup cane sugar
1 tsp baking soda
1/2 tsp salt
2 tbsp lime zest
2 tbsp lemon juice
1 tbsp lime juice
1/4 cup oil
1 tsp vanilla extract
Frosting:
1 cup nondairy butter (soften)
5 cups powdered sugar
1/4 cup lime juice
1/4 cup tequila
Coarse salt (garnish)

In a large mixing bowl, whisk flour, sugar, baking soda, salt, and lime zest together and set aside

Pour the wet ingredients over the flour mixture and mix until combined. Do not over mix to avoid air pockets.
Fill cupcakes 3/4 full and place in the oven for 18 minutes or until golden brown.
Let cool for about 5 minutes before transferring to a cooling rack to cool completely.
