Vegan Mimosa Cupcakes


Mother's Day is next weekend and why not treat her with some yummy Mimosa Cupcakes. I love these cupcakes because their moist and the icing is so good! With these uncertain crazy times, I believe in making the best of it and work with what you got.


You may not be able to treat your mom to her favorite restaurant, but you can create something special at home. I hope you enjoy these yummy cupcakes as much as I do!




Ingredients:

1 1/4 cup unbleached all-purpose flour

3/4 cup cane sugar

1 tsp baking soda

1/2 tsp salt

2 tbsp lemon juice

1/4 cup sparkling wine

1/4 cup oil

2 tsp orange extract

Frosting:

1 cup nondairy butter (soften)

5 cups powdered sugar

3 tbsp. sparkling wine

2 tsp orange extract

1 squirt red coloring

4 squirts yellow coloring

sliced strawberries (garnish)


Directions:

  1. Preheat oven 350F and prepare a cupcake pan with 12 liners

  2. In a large mixing bowl, whisk flour, sugar, baking soda, salt, and together and set aside

  3. In a medium mixing bowl, whisk lemon juice, oil, sparkling wine and orange extract together

  4. Pour the wet ingredients over the flour mixture and mix until combined. Do not over mix to avoid air pockets.

  5. Fill cupcakes 3/4 full and place in the oven for 18 minutes or until golden brown.

  6. Let cool for about 5 minutes before transferring to a cooling rack to cool completely.

  7. Decorate cupcakes with frosting.


Frosting:

1. Cream butter with a stand or hand mixer

2. Add one cup of sugar at a time, mix well between each add.

3. Add orange extract, sparkling wine, food colorings mix well

4. Decorate cupcakes and add a slice of strawberry for garnish
