Vegan Monkey Bread
I have a major sweet tooth. In hindsight, that might be why I have a vegan bakery. This vegan monkey bread reminded me of all the state fairs and festivals we missed out this year because of COVID-19. Enjoy, and maybe we can enjoy festivals next year.

4 cups unbleached all-purpose flour
1 cup coconut sugar
2 tbsp cornstarch
4 tsps baking soda
2 tsps salt
3/4 cup nondairy butter (cold)
1 1/4 cup almond milk
Cinnamon sugar mix:
1/2 cup brown sugar
2 1/2 tsp cinnamon
Icing:
1 cup powdered sugar
2 tbsp almond milk
1 tsp vanilla extract
Directions:
Preheat oven on 350F and lower your rack in the range. Grease bundt pan
In a large bowl, whisk flour, coconut sugar, cornstarch, baking soda, salt
Add milk, cut butter into slices to create dough
Mix until it makes a dough
Lightly flour a clean surface and roll out the dough about an inch thick
Cut strips about an inch wide. You should be able to make about 40 to 45 balls
Take the strips and roll into balls
Roll balls in cinnamon sugar, place in the bundt pan, repeat
Bake for 30 to 35 minutes
Prepare Icing: Stir together powdered sugar, vanilla, milk, and drizzle over the monkey bread
