Vegan Mushroom Stroganoff
(adapted from Tasty recipe)

I tweaked this recipe from Tasty to make it vegan friendly. It was an easy recipe and very good.
Ingredients:
2 tbsp Olive oil
1 Medium Onion
16 oz Shitake mushrooms
3 Garlic cloves (minced)
1/2 tsp Thyme
2 1/2 cups Vegetable broth
1 tbsp Liquid aminos
1/4 cup Unbleached all-purpose flour
salt and pepper to taste
1 1/2 cup Almond milk
12 oz Fusilli pasta
Directions:
In a skillet on medium-high heat, sautee onions and garlic
Add mushrooms, thyme, broth, liquid aminos, flour, and almond milk
Add uncooked pasta cook for about 10 to 15 minutes stirring frequently
