Vegan Pumpkin Spice Sugar Donuts

Grab a cup of coffee or milk and enjoy these delicious donuts for breakfast!



2 cups unbleached all-purpose flour

1/2 cup dark brown sugar

2 tsp baking soda

1 tsp salt

1 cup pumpkin puree

2 tbsp flaxmeal

6 tbsp water

2 tsp pumpkin spice

3/4 cup almond milk

1/4 cup nondairy butter (melted)

Pumpkin Spice Sugar:

1 cup pure cane sugar

1 1/2 tsp pumpkin spice

1/4 cup nondairy butter (melted)

Maple Glaze:

1 cup powdered sugar

1/4 cup nondairy butter (melted)

1 tsp maple syrup

2-3 tbsp water

1 tsp vanilla extract


Step 1-Preheat oven at 325F. Spray donut pan with baking spray.

Step 2-Make flax egg and let sit for 10 minutes.

-2 tbsp flax meal and 6 tbsp water mix and let sit. It will form a gel.

Step 3-In a mixing bowl, whisk flour, sugar, baking soda, salt, and pumpkin spice.

Step 4-In another mixing bowl, combine pumpkin, flax egg, milk, butter. Stir well.

Step 5-Add pumpkin mixture to flour mixture and combine. Do not over mix batter. Spoon into a donut pan and bake in the oven for 8-11 minutes or until donuts spring back when you touch them.

Prepare Glaze:

Add ingredients to a small bowl and mix well. Dip top of donut in glaze, allow excess to drip off, and place on a cooling rack.

Prepare Pumpkin spice sugar:

In a small mixing bowl, add dry ingredients, and in another bowl, add melted butter. Brush melted butter on the donut and toss the donut in sugar until coated.
