I love my comfort foods, but I also love yummy healthy meals that don't take long to make. When you get home from work, you don't want to spend hours in the kitchen. This meal checks all the blocks. It is healthy, quick, and yummy!
Olive oil (for cooking)
2 med Sweet Potatoes (diced)
1 tbsp Italian seasoning
salt and pepper to taste
14 oz Plantbased Italian Sausage (sliced)
1 sm. Onion (sliced)
3 Garlic cloves (minced)
1 bunch Kale
1) Heat oil on medium heat and cook sweet potatoes until brown and tender.
2) Add the sausage, onion, garlic, Italian seasoning, salt, and pepper cook 3-4 min
3) Add Kale and add more seasoning if desired.
4) Once the kale has withered, dinner is ready
