
Vegan Stewed Peaches and Buscuits
I woke up one-morning wanting biscuits and something sweet to serve them with. I had some fresh peaches leftover, so I made this yummy recipe! What a great combination on Saturday morning with a cup of coffee.

Ingredients:
Biscuits
2 cups All-purpose flour
1 tbsp Baking Powder
1 tbsp Sugar
1 tsp Salt
1/3 cup Plant-based butter stick (cold)
3/4 cup Almond milk
1 tbsp Plant-based butter (melted)
Peaches
1 1/2 cups Fresh Peaches (sliced)
1/2 cup Sugar
1/4 cup Maple syrup
1 tbsp Lemon Juice
1 tbsp Cornstarch
1 tsp Cinnamon
1/2 tsp Nutmeg
1 tbsp Water
Sauce
1/3 cup Maple syrup
1 tbsp Plant-based butter
1 tsp Cinnamon
Sprinkle with powdered sugar (optional)
Directions:
In a large mixing bowl, combine flour, baking soda, salt, and sugar in a bowl. Cut butter add to the flour mix. Add almond milk a little at a time until you form a dough. You can mix the dough with your fingers, a fork or dough cutter, up to you.
Gently flour a clean surface and knead your dough for about 5 to 10 minutes. Roll out dough with a rolling pin about 1/4 of an inch thick.
Cut out biscuits with a 3 inches round cutter. Brush melted butter over biscuits. Sprinkle a little cinnamon sugar on the top of each biscuit.
Bake in a 375 F preheated oven for 25 minutes.
Prepare Stewed Peaches
In a medium saucepan over medium-high heat, add peaches, sugar, maple syrup, lemon juice, cornstarch, cinnamon, nutmeg, and water. Stir frequently and bring to a boil. It will thicken.
Prepare Sauce
In a small saucepan over medium-high heat, combine maple syrup, butter, cinnamon cook for about 3 to 4 minutes.
Serving biscuits- slice biscuit open, add peaches, pour the sauce over the top and sprinkle with powdered sugar
