Watermelon Sugar Cookies


Watermelon reminds everyone of summer, so I thought a watermelon sugar cookie would be a great treat to add to a summer picnic.

This recipe should yield two dozen cookies.

Ingredients:

Flax egg- 2 tbsps ground flax meal, 6 tbsp water

1 cup Nondairy butter (softened)

1 cup Cane sugar

1 tsp Vanilla extract

2 2/3 cups Unbleached all-purpose flour

2 tsp Baking Soda

1 tsp Salt

1 1/2 tbsp Almond milk

Frosting:

2 1/2 cups Powdered sugar

1-3 tbsp water (for consistency)

1/2 cup Mini chocolate chips(Enjoy Life brand is allergy and vegan

friendly)

Red and green food coloring

Directions:

  • In a small mixing bowl, whisk flour, baking soda, and salt

  • Use a hand or stand mixer on medium speed to cream butter and sugar until fluffy. Add milk, flax egg, and vanilla mix well.

  • Add flour mix a cup at a time, mix well in between adding flour

  • Add drops of red coloring to the dough until you achieve the color you want.

  • Form a ball with the dough, cover, and chill in the refrigerator for 2 hours.

  • Preheat oven 375F

  • Divide the dough in half and roll out on a lightly floured surface to 1/4 inch thickness. Cut dough with a 3 inch round cookie cutter. Cut the circles in half, and place on an ungreased baking sheet. Repeat with remaining dough.

  • Bake in the oven for 8-10 minutes or until cookies are slightly browned and set. Allow cooling completely before decorating.

Making the Frosting:

  • With a hand or stand mixer, mix powdered sugar and water until smooth. Add drops of green food coloring as you desire. Blend well.

  • You can frost the edges by dipping the cookie into the green frosting or use a pastry bag and pipe the edges with green frosting.

  • Strategically sprinkle the mini chocolate chips on the cookie to look like seeds.
